It is connected to traditions, historical events and cultural exchanges,unchanged to this day, sculpted within the culture of the Eastern Mediterranean. Crystallization is a natural and completely normal change that occurs in raw honey and it happens mainly during winter due to the cold. Honey is converted from a liquid to a solid – semi-solid state, without affecting its quality.

 

Decrystallization
Crystallized honey can easily return to its liquid form. Just heat it gently in a water bath (bain-marie) or place the whole jar without the lid in 45 degrees Celsius water for a while.
