Roasted Kymi Fig and Kasseri Phyllo Parcels
Crisp phyllo parcels filled with PDO Kymi figs, Kasseri cheese, walnuts and thyme honey, baked until golden and served warm.
These elegant phyllo parcels showcase the soft, delicate texture of PDO Kymi figs from Askada Farm, paired with the nutty richness of Kasseri cheese. Each parcel is brushed with olive oil and baked until the phyllo turns golden and crisp, while the filling becomes warm and fragrant. The natural sweetness of the sun-dried figs balances the savory cheese, creating a versatile dish suitable as an appetizer or light main course.

Prepare filling and workspace
Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper. In a small bowl, combine the quartered Kymi figs, chopped walnuts, honey, thyme leaves and black pepper. Mix gently to coat the figs evenly. Set aside. Unwrap the phyllo sheets and cover with a lightly dampened kitchen towel to prevent drying.

Assemble the parcels
Place one phyllo sheet on a clean work surface with the long edge facing you. Brush lightly with olive oil. Place one piece of Kasseri cheese in the center of the lower third of the sheet, about 5 cm from the bottom edge. Top the cheese with one-eighth of the fig mixture (approximately 4 fig quarters and accompanying nuts). Fold the bottom edge of phyllo over the filling, then fold in the left and right sides to enclose. Roll upward to form a neat rectangular parcel. Place seam-side down on the prepared baking sheet. Repeat with remaining phyllo sheets and filling to create 8 parcels total. Brush the top of each parcel generously with olive oil.

Bake until golden
Place the baking sheet in the preheated oven and bake for 16-18 minutes, until the phyllo is golden brown and crisp. Rotate the baking sheet halfway through baking to ensure even coloring. The parcels should be firm to the touch and the cheese inside just melted.

Serve warm
Remove from the oven and let the parcels rest on the baking sheet for 2 minutes. Transfer to a serving platter and garnish with fresh thyme sprigs if desired. Serve immediately while the phyllo is crisp and the filling is warm.
Serving note
Keep phyllo sheets covered with a lightly dampened kitchen towel while working to prevent drying. Work quickly but carefully when folding to maintain crisp layers. If Kasseri is unavailable, substitute with a semi-hard sheep's milk cheese. The parcels can be assembled up to 4 hours ahead and refrigerated, then brushed with oil and baked just before serving. Serve within 15 minutes of baking for optimal texture.
