The rusks should absorb the liquid and begin to soften while retaining some texture.

    Distribute the crumbled feta cheese evenly over the tomato-topped rusks. Arrange 6 halved Kalamata olive pieces on each serving. Select tomatoes at peak ripeness for maximum sweetness and juice. The barley rusks should be moistened but not soggy—aim for a texture that yields to the bite while retaining some structure. If the rusks are very dry, lightly mist them with water before adding tomatoes. The high phenolic olive oil is best used raw to preserve its antioxidant properties; do not heat it. For a more intense flavor, allow the assembled dakos to rest for 5 minutes before serving, letting the juices meld. Leftover assembled dakos do not store well, but individual components can be prepped in advance and assembled just before serving.
