St Olive single harvest is a premium extra virgin olive oil of extremely low acidity, available in limited quantities.

Characteristics:

  • Intense aroma of fresh – cut grass, mild aromas of unripe olive groves and tomato leaves and also discrete aromas of green peppers, almond and eucalyptus. It has a spicy taste and peppery aftertaste, a silky body, very good balance and great complexity.
  • It’s ideal for marinated foods, T-Bone steak fillets and as a dressing for soups.

This quality is achieved through a strict process of selection and processing. Only the best olives are chosen for cold extraction, which is followed by additional extraction of olive oil’s margarines through natural filtering with the use of organic materials. The later is a signal from the past generations; a tradition that is believed to protect  the aroma and taste of the olive juice during its storage.

The olive oil is then bottled by hand in high quality, thick tinted glass bottles and properly stored.  Lastly, it comes packaged in exclusively designed and awarded bottle.

The term “St. Olive” attempts to bring forward the chthonic, primary, life-giving character of the oil fruit. Its logo is a hand that blesses; –  made by a specialist in byzantine iconography - in order to be faithful to the codes of the symbolic language we choose.

It was our way to confirm what we believe is on the basis of every communication: everything, from the simple to the complicated, is "a leap of faith' and one there is no reason to take without being well prepared.
